After officially kicking off my new lease on fitness by dragging myself through a half-marathon yesterday, I was ready to jump head first into cleaning up my eating habits by creating a menu of healthy and easy to prepare meals. First up was a Paleo Turkey Meatloaf dish that proved to be equally, if not more satisfying than it’s high-calorie counterparts. As I am not going completely paleo, I did choose to add some panko breadcrumbs to the mix, but I have heard the recipe binds just as well without. Either way, don’t forget a ketchup topping (paleo or otherwise)!
