So yesterday was an overall crappy day and I DID NOT want to cook when I came home from work. I picked this recipe because it seemed quick, and it involved oranges (I rationalized the Vitamin C in said oranges would improve my foul mood ;)). Whether or not it truly affected my mood, it turned out amazing, super quick and super yummy. This recipe is Paleo for the most part, however I served it over Basmati rice. I also adapted the recipe and used two-chicken breasts, and ate half for dinner, and took half for lunch today (and it was just as tasty this afternoon!).
